Instructions:
Preheat oven to 400°F (200°C). Line a cookie sheet with foil; spray foil with cooking spray. Add water and butter to a large saucepan and bring to a boil. Add the flour all at once and stir constantly until the dough comes away from the sides of the pan and forms a thick, smooth ball (about a minute or two). Remove from heat. Cool for one minute. Using an electric mixer, add eggs one at a time, beating after each, until dough is smooth. Mix in ham, cheese, and dry mustard (if using) by hand.
Drop mixture by rounded teaspoon about one inch apart on to prepared cookie sheet. Bake 15-20 minutes or until golden brown. Makes about 5 dozen/60 appetizers.
Tip: These appetizers can be frozen for up to a month. Reheat in microwave or 325°F (170°C) oven.
