Egg Salad Tex Mex Wrap

Egg Salad Tex Mex Wrap

Ingredients:
8 hard-cooked eggs
1/3 cup (75 mL) light mayonnaise
1 tsp (5 mL) freshly squeezed lime juice
2 Tbsp (30 mL) finely diced green pepper
2 Tbsp (30 mL) finely diced red pepper
1 tsp (5 mL) finely diced jalapeno pepper
2 Tbsp (30 mL) finely diced radishes
Salt and pepper, to taste
4 whole wheat tortillas
1/2 cup (125 mL) shredded lettuce
4 thin slices red onion
4 sprigs fresh coriander

Mash eggs with mayonnaise to desired texture. Add lime juice, peppers, radishes, salt and pepper. Spoon egg filling onto middle of each tortilla; add lettuce, onion and coriander. Fold lower third of the tortilla over egg mixture and fold the two opposite sides over the centre to form a pocket.

Makes 4 servings.

Tip: Tomato-flavoured tortillas are a delicious substitute for whole wheat tortillas.

Suggestion for Complete Meal: Serve with a spinach salad followed by yogurt for dessert.
