Country Frittata

Ingredients:
Cooking spray
1 cup (250 mL) chopped cooked ham
1/2 cup (125 mL) chopped onion
2 cups (500 mL) frozen hash brown potatoes
4 eggs
2 tbsp (30 mL) water
Salt and pepper, to taste
1/2 cup (125 mL) shredded Cheddar cheese
Tomato chutney or chunky salsa, to taste
 
Instructions:
Spray an 8-inch (20 cm) non-stick skillet with cooking spray. Heat skillet over medium-high heat. Add cooked ham and onion, and sauté until onion is tender; set aside. Generously spray skillet again with cooking spray and cook potatoes over medium heat until tender and golden brown.

Beat together eggs, water, salt and pepper in a bowl; pour over potatoes. As eggs begin to set, lift edges to allow the uncooked egg to flow underneath. When eggs are set, spoon ham and onion mixture on top. Sprinkle with cheese; cover skillet to melt cheese.

Cut into wedges and serve with tomato chutney.

Makes 2 servings.

Tip: Instead of covering the skillet to melt cheese, you can place it under the broiler until the cheese melts. Protect skillet handle by covering it completely with a double thickness of aluminum foil.
