Cinnamon Buns with Cream Cheese Frosting

Ingredients:

1/4 cup (50 mL) warm water
2 1/4 tsp (11 mL) active dry yeast
1/3 cup (75 mL) butter, softened
½ cup (125 mL) sugar
1 tsp (5 mL) salt
2 large eggs
3/4 cup (175 mL) milk
4 cups (1 L) all-purpose flour

Filling

1 cup (250 mL) packed brown sugar
1/3 cup (75 mL) butter, softened
1-3 Tbsp (15-45 mL) cinnamon

Frosting

1/3 cup (75 mL) butter, softened
1 1/2 cups (375 mL) icing sugar
1/4 cup (50 mL) cream cheese
1 Tbsp (15 mL) milk
1/2 tsp (2 mL) vanilla

Instructions:

Stir water and yeast together in measuring cup. Sprinkle sugar over top. Let stand 10 minutes. Mixture should double in volume.

In a large mixing bowl or stand mixer, cream butter and sugar. Add salt and eggs and beat well. Add milk and yeast mixture. Mix to combine ingredients.  Add 3 cups (750 mL) flour and mix well. Add the remaining cup of flour gradually to form a soft dough. Knead dough for 5-6 minutes by hand or with a stand mixer.

Place the dough into a large, greased bowl. Cover and let rise in a warm place until doubled in size, about 1 hour. Meanwhile, beat together filling ingredients in medium size bowl, until well mixed.

Once the dough has doubled in size, roll out on a lightly floured surface, to a rectangle, 18 x 12 inches in size (45x30 cm) and 1/4 inch (6 mm) thick. Spread the butter mixture evenly over the dough surface. Carefully roll the dough, starting with the long edge. Cut the roll into 12 equal size rounds. Place the rolls into a well-greased 13x9 inch (33x22 cm) pan. Cover and let rise another 30-45 minutes, until doubled in size. Meanwhile, preheat oven to 350⁰F (180⁰C). Bake cinnamon buns 25-30 minutes or until top is golden brown.

While rolls are baking, prepare frosting. In a medium size bowl, beat all ingredients together until fluffy. Once rolls are cooled, spread frosting over the top of buns.
