Fruit Salad with Honey Lime Dressing

Fruit Salad with Honey Lime Dressing

Ingredients:
1- (10 oz 284 mL) mandarin orange sections (juice-packed), drained
2 cups (500 mL) strawberries, halved
2 cups (500 mL) cubed honeydew melon
2 medium bananas, sliced


Dressing
3 eggs, well beaten
1/2 cup (125 mL) liquid honey
1/4 cup (50 mL) fresh lime juice
1 cup (250 mL) dairy sour cream (14% b.f.)
 
Instructions:
Combine mandarin oranges, strawberries and melon. Add bananas and toss well. Cover bowl and chill. Just before serving, pour dressing over fruit; toss until fruit is well coated.

For dressing: In a saucepan, combine eggs, honey and lime juice. Cook and stir over low heat until mixture comes to a boil and thickens. Cool. Fold in sour cream. Chill.

Makes 2 cups (500 mL)
