Devil’s Food Cake

1 cup (250 mL) butter, room temperature
1 ½ cup (375 mL) brown sugar
4 eggs
1 tsp (5 mL) vanilla
4 oz (125 g) semisweet chocolate, melted
¾ cup (175 mL) milk
2 cups (500 mL) flour
2/3 cup (150 mL) cocoa powder
1 tsp (5 mL) baking powder
½ tsp (2 mL) baking soda
½ tsp (2 mL) salt


Preheat your oven to 325°F (160°C) and place a rack in the middle of your oven. Prepare 2 9-inch round pans by greasing them and lining the bottoms with wax paper.

Place 4 ounces of semisweet chocolate in a glass bowl. Melt the chocolate in a microwave at 60% power in 30-40 second intervals to ensure it doesn’t burn. Set aside to cool until you are ready to use it.

Place butter and brown sugar in the bowl of an electric mixer and cream together on medium speed about 4-6 minutes.

Meanwhile, combine flour, cocoa powder, baking soda, baking powder and salt in medium bowl. Set aside.

Add eggs to the butter mixture one at a time. Between each egg, stop the mixer and scrape down the sides of the bowl to make sure everything is incorporated.  Add vanilla.

Add melted chocolate and beat well for 2-3 minutes.

Combine the flour mixture, alternating with the milk, beginning and ending with the flour. Beat until well combined.

Divide the cake batter evenly between the two round cake pans and smooth the tops. Place them in the preheated oven and bake for 25-30 minutes, until a toothpick inserted in the centre comes out clean.

Cool for 30 minutes in pans before moving to cooling rack.


2 ½ cups (625 mL) icing sugar
2/3 cup (150 mL) cocoa powder
½ cup (125 mL) butter, melted
1 tsp (5 mL) instant coffee powder, dissolved in 1 tsp water
1/3 cup (75 mL) milk
1/8 tsp (0.5 mL) salt


Beat melted butter with half the icing sugar.

Add instant coffee powder and the milk. 

Add the remaining icing sugar, cocoa powder and beat until blended and smooth.

If necessary, add milk or icing sugar to reach desired consistency.

Ice the cake on a serving plate and enjoy.
