4 hard-cooked eggs, peeled
2 tbsp (30 mL) light mayonnaise
1/2 tsp (2 mL) prepared or Dijon-style mustard
2 slices of whole wheat bread
Vegetables for making the face
Mix eggs, mayonnaise and mustard in a bowl. To make the sandwich, spread some of the egg salad over a slice of whole grain bread. Make an 'Egg Face' by creating features such as hair (curly lettuce, grated cheese, grated carrots, or alfalfa sprouts), eyes (cucumber slices pickle slices, or cherry tomatoes), a nose (small pickle or baby carrot), a mouth (tomato wedge, carrot or celery stick, or cheese slice), and ears (sliced, halved cucumbers or tomatoes).
Tip: For a twist on flavour, add onions, celery and spices to the egg salad mixture.
