Quick Morning Pizza


2 eggs
1/2 tsp (2 mL) dried oregano or basil (optional)
8 slices pepperoni
2 tbsp (30 mL) shredded part skim Mozzarella cheese
3 tbsp (45 mL) pizza or pasta sauce (warmed if desired)
Cooking spray


Spray small non-stick skillet with cooking spray. Heat over medium heat.

Whisk together eggs and oregano or basil, if using, in bowl; pour into skillet, stir and top with pepperoni and cheese. Cover and cook until eggs are set and cheese is melted, about 3 minutes. Slide out onto plate; serve with sauce.

Tip: Get creative with your pizza by combining your favourite meats, cheeses and veggies.Makes 1 serving.
