6 medium apples, finely chopped
¼ cup (50 mL) lemon juice
1 cup (250 mL) brown sugar
1 tsp (5 mL) cinnamon
10 – 12 six-inch (15 cm) crepes

Mix apples and lemon juice. Set aside.
In large glass bowl, beat eggs thoroughly. Stir in brown sugar and cinnamon, then apples. Microwave, uncovered with full power for 7 to 8 minutes, stopping to stir every 2 minutes. Apples should be soft and mixture somewhat thickened.
Spoon filling down center of crepes. Roll crepes and place on serving plates. Garnish with sprinkling of cinnamon, if desired. Microwave with full power 30 to 40 seconds for each crepe. Top warm crepes with ice cream, whipped cream or chopped nuts, if desired.
