¼ cup (60 mL) strong brewed black tea, chilled
2 ½ Tbsp (22 mL) lemon juice
1 Tbsp (15 mL) simple syrup *Optional substitution: honey or agave syrup
¼ cup (50 mL) pasteurized liquid egg whites (2 egg whites)
Combine all ingredients to a shaker with ice. Shake until chilled and egg whites are foamed. Strain and serve in a chilled glass. Spoon egg white foam overtop each glass.
Makes 2 servings.
