Scotch Eggs

Ingredients:

1 lb (500 g) cold bulk pork sausage
8 hard-cooked eggs, peeled
1 envelope seasoned coating mix for chicken

Instructions:

Divide sausage into 8 equal portions. Pat each portion into a 4 x 3-inch (10 x 8 cm) rectangle and wrap around an egg, pressing to cover. Place coating mix in a plastic bag. Shake eggs in coating mix, one at a time, then place on baking sheet. Bake in a preheated 400°F (200°C) oven for 25 to 30 minutes or until golden brown and sausage is cooked.

Makes 8 servings.
