Chocolate Swirl Cheesecake Squares

Ingredients:
4 ounces (30 g) semisweet chocolate squares, chopped
1 cup (250mL) sugar
3 - 8 ounce (250 g) packages cream cheese, softened
5 eggs
1 tbsp (15 mL) vanilla extract

Instructions:
In a small saucepan, melt chocolate squares over very low heat, stirring constantly, or microwave in a glass bowl on High, stirring every 10 to 20 seconds. Set aside to cool.

Preheat oven to 350 °F (180°C). Line a 9 x 9-inch (22 x 22 cm) baking pan with parchment paper. In a medium mixing bowl, beat together sugar and softened cream cheese. Add eggs one at a time, beating well after each addition. Stir in vanilla.

Transfer 2 cups (500 mL) of the cheese mixture to a medium bowl. Stir in cooled chocolate until thoroughly combined. Pour remaining cheese mixture into the prepared baking dish. Drop spoonfuls of the chocolate cheese mixture over the top of the batter, and draw a rubber spatula or knife through the batter in a zigzag or swirl pattern to create a marbled effect. Bake for 40 to 45 minutes, or until cake pulls away from the sides of the pan. Cool, chill and cut into squares. If desired, serve with fresh fruit.
