Strawberry Lemonade Bars

Ingredients:

 

Crust

¼ cup (50 mL) sugar

½ cup (125 mL) butter, room temperature

1 ½ cups (375 mL) all-purpose flour

¼ tsp (1 mL) salt

 

Filling

1 cup (250 mL) fresh lemon juice

2 - 3 tsp (10-15 mL) lemon zest

6 – 8 large strawberries

1 ¼ cups (300 mL) sugar

4 large eggs

¼ cup (50mL) all-purpose flour

½ tsp (2 mL) baking powder

¼ tsp (1 mL) salt

Icing sugar (optional)

 

Instructions:

Preheat oven to 350°F (180°C). Lightly grease a 9 x 9 inch (22 x 22 cm) baking pan. In a large bowl, cream together sugar and butter until smooth and fluffy. Working at a low speed, gradually beat in flour and salt until mixture is crumbly. Transfer into prepared pan and press into an even layer. Bake for about 15 minutes until crust is set at the edges. Meanwhile, in the bowl of a food processor combine lemon juice, lemon zest, strawberries, sugar and eggs and process until smooth. Add in flour, baking powder and salt, and then pulse until smooth. Gently pour the filling over the hot crust when it has finished baking. Return pan to oven and bake for 23 - 26 minutes until filling is set. Cool completely before slicing and use a damp knife to ensure clean slices. If desired, dust bars with icing sugar once cooled. Store bars in refrigerator. Makes 24 bars
