Viennese Cookies

Ingredients:

1 cup (250 mL) butter
1 cup (250 mL) white sugar
1 egg, lightly beaten
1 cup (250 mL) pecans, finely chopped
2 cups (500 mL) all-purpose flour
1 cup (250 mL) chocolate chips
¼ tsp (1 mL) salt
2 tsp (10 mL) grated lemon rind
¼ tsp (1 mL) cloves
½ tsp (2 mL) cinnamon
¼ cup (50 mL) white sugar

Instructions:

Preheat oven to 325°F (160°C). Cream butter and sugar together for 2 minutes. Add lightly beaten egg and mix thoroughly. In a separate medium-sized bowl, combine pecans, flour, chocolate chips, salt, lemon rind, cloves and cinnamon; blend into egg-sugar mixture. Refrigerate for 1 hour. Roll into balls (about the size of a large walnut). Place each ball on parchment lined baking sheet, about 2 inches (5 cm) apart. Place ¼ cup white sugar in small bowl. Using a small drinking glass, dip bottom of glass in sugar, then gently flatten each cookie. Bake for 10 - 12 minutes until lightly browned.

Makes 3 - 4 dozen cookies.
