Ingredients:
1 lb (454 g) ground bison or ground beef
1/4 cup (60 mL) yellow or white onion, finely minced
3-4 garlic cloves minced fine or 1 Tbsp (15 mL) garlic powder
1 tsp (5 mL) dried oregano
1 tsp (5 mL) dried basil
1/4 tsp (1 mL) black pepper 3/4 tsp (4 mL) salt
1 large egg
2 Tbsp (30 mL) milk
1/4 cup (60 mL) breadcrumbs
1/4 cup (60 mL) olive oil for frying
Step two:
One jar marinara sauce (14 ounces) store bought or 500 ml homemade sauce 1/2 cup (125 mL) water or beef stock
4-6 eggs
pinch salt and pepper
1/4 cup (60 mL) fresh grated parmesan cheese fresh basil for garnish
Instructions:
- Preheat oven to 425 degrees.
- Mix all meatball ingredients in a giant bowl, mix until Portion into 1 ounce balls.
- Heat cast iron pan or deep oven safe skillet on stove top to medium Add 1/4 cup olive oil. Add meatballs sear on all sides until golden brown around 8-10 minutes.
- Add marinara sauce, water or stock if using, mix gently, cover and simmer on low 3 Add parmesan cheese on top.
- Make 4-5 holes in the sauce, crack each egg into them. Season eggs with pinch salt and pepper. Place pan in oven uncovered for 10-15 minutes or until eggs reach desired consistency. Remove from oven and garnish with fresh chopped Serve with bannock, bread, or over wild & white rice combo or any pasta!
