Omelettes and Fritattas

Thai Omelette

Ingredients:

1 medium tomato, chopped
½ yellow pepper, chopped
¼ cup (50 mL) green onions, chopped
2 tsp (10 mL) canola oil
½ cup (125 mL) ground pork
1 clove garlic, minced
1 tsp (5 mL) fish sauce
1 tbsp (15 mL) soy sauce
Fresh cilantro leaves, chopped (to taste)
1 small hot red chili pepper or ¼ tsp (1mL) chili flakes
4 eggs, beaten

Instructions:

In a small bowl, combine tomato, yellow pepper and onion.

In a small non-stick frying pan, heat 2 tsp (10 mL) oil over medium-high heat. Add pork and stir fry for 3 minutes. Add garlic and cook 30 seconds longer. Stir in vegetables, fish sauce, and soy sauce. Cook and stir for 5-6 minutes longer, until pork is fully cooked and mixture thickens slightly. Stir in coriander and chili pepper.

Heat a small non-stick skillet over medium-high heat. Spray with cooking spray. In a small bowl, whisk 1 egg and pour into skillet. Rotate skillet so egg mixture coats bottom of skillet. Cook until egg sets. Slide omelette onto plate and keep warm. Repeat to make three more omelettes.

For each omelette, spoon ¼ of pork mixture into center; fold two opposite sides of omelette to the center, then fold in the two remaining sides to form a square. Place omelettes on individual plates and garnish with cilantro.

Makes 4 servings.

Tip: Green onion stalks can be used to decoratively tie each packet.
