Sweet Potato Brulée

A delicious vegetable side to any meal

4 cups (1 L) cooked, mashed sweet potato (about 4-5 medium-sized sweet potatoes)

2 eggs, beaten

½ cup (125 mL) milk

¾ cup (175 mL) Asiago cheese, shredded

½ tsp (2 mL) grated nutmeg

Salt and pepper to taste

2 tbsp (25mL) brown sugar

Preheat oven to 350 °F (175 °C). Clean skin of sweet potatoes, pierce with a fork, and place on baking sheet. Bake for about 1 – 1 ½ hours, until potatoes are soft.  Remove potatoes from oven and set aside to cool.

Cut potatoes in half and scoop out the potato into a medium sized bowl. Mash potatoes and stir in eggs, milk, Asiago, nutmeg, salt and pepper.  Transfer potato mixture to a buttered 10 inch (25 cm) baking dish. Bake for 20 minutes, or until potato is hot. Sprinkle brown sugar over top of potato and place under broiler. Broil, watching constantly, for 1 to 2 minutes or until sugar bubbles and turns golden.
