Quick-Breads (muffins, banana bread, etc.)

Savoury Muffins

Ingredients:

1 1/2 cups (375 mL) cooked broccoli (or thawed frozen broccoli), chopped
1 1/2 cups (375 mL) cooked ham, chopped
1 medium onion, chopped
1/2 cup (125 mL) grated Parmesan cheese
6 eggs
1/2 cup (125 mL) vegetable oil
1 1/4 cups (300 mL) all-purpose flour
1 tbsp (15 mL) baking powder
1 tsp (5 mL) dried oregano
1 tsp (5 mL) parsley leaves
1/2 tsp (2 mL) dried thyme leaves
1/4 tsp (1 mL) garlic powder

Instructions:

Preheat oven to 375°F (190°C). In a large bowl, combine broccoli, ham, onion and cheese. In another bowl, beat eggs until foamy; blend in oil. Add the dry ingredients; beat until smooth. Stir in broccoli mixture just until blended. Pour into greased muffin cups. Bake muffins for 20 to 25 minutes or until lightly browned. Serve warm or cold. Makes approximately 12-18 muffins.

Tip: Any leftover muffins should be stored in the refrigerator. These also freeze well.
