Asparagus Mimosa Salad

Ingredients:

2 tbsp (30 mL) olive oil
1 tbsp (15 mL) white wine vinegar
1 tbsp (15 mL) honey
1 tsp (5 mL) Dijon mustard
Salt and pepper to taste
2 eggs, hard-cooked and chilled
1 head leaf lettuce, torn into bite size pieces
1 lb (500 g) asparagus, trimmed, blanched and chilled
2 tbsp (30 mL) finely chopped fresh chives

Instructions:

In small bowl, whisk together olive oil, vinegar, honey, Dijon mustard, salt and pepper. Set vinaigrette aside.
Separate hard-cooked egg whites from yolks and finely grate eggs.
Toss lettuce with vinaigrette and then divide lettuce onto 4 salad plates. Divide asparagus and place on top of lettuce on each plate. Sprinkle each plate with grated egg. Garnish with chives. Serve immediately.
